From the best vineyards on the slopes of Montejunto, grapes were handpicked at the optimum ripeness point. After destemming and soft pressing, the musts endured a cold settling, after which, having reached the required clarity, were fermented in stainless-steel vats at a controlled temperature of 16-17ºC.
